Pan well worth the money. Bought it because i really like the hard anodized and really dislike non-stick interiors. Well, this has no non-stick, so exactly what looking for. Did a 19# turkey for Thanksgiving. Even tho not a non-stick, the interior cleaned up with no effort. And we had some burned on vegatables on the bottom as our broth boiled off. Even so, soaked it a few hours, and went to clean. Just used a Dobbie pad and Dawn, cleaned up real quick. Was impressed. Also rosted 6# of brisket in it the other week. Again, cleaned up real nice and brisket cooked in a shorter time. So even tho $60, well worth the extra money from the cheap pans out there. Definitely get what you pay for. Problem with the cheap non-sticks is eventually the non-stick comes off. So in long run a waste of money. I know, this pan replaced one of those cheaper non-sticks. Should have bought this the first time around.

I love this pan. I've cooked one chicken and two turkeys in it in the little time I've had it. It's not non-stick but cleans up like it is. A little warm water and it's brand new again. Easy. The handles turn in so it's easy to store. I use the pan without the rack to defrost the turkeys (little hint there). Well worth the money!


Please Don't Buy This Pan! [Posted on 2008-12-21]
I found myself in need of a roasting pan a few days before Thanksgiving. Recognizing the Calphalon name, I decided that $60 was a fair tax on my lack of preparation. I ignored a previous reviewer that complained of poor quality, and I'll admit, it was because I thought his standards may have been too high. Lest you think the same of this one star review, know that I am not a tremendously demanding cook. Rest assured, this item will fail to meet even the lowest standards for what constitutes a decent pan.

First, the pan's appearance should indicate that it is NOT the quality you're imagining. It is Made in China (it says so right on the box), and whatever your feelings on outsourced manufacturing, this pan at least is extraordinarily horrid. The anodized finish on the pan should be smooth to the touch, but this pan's finish is extremely rough. When carrying it, I was genuinely concerned about getting metal splinters. It can probably best be imagined as a painted wall with too few coats; I'm not very familiar with the anodizing process, so I can't say whether that's the case, but it certainly feels like it. Further, the fasteners on the handles are so cheaply attached that they look quite crooked, and they appeared to have rusted after only one use and proper cleaning.

I can't say too terribly much about the performance, as I only attempted to use it one time and am not an expert. Given that the turkey unexpectedly required too much time through fault of my oven and not the pan, I suppose it's safe to assume the pan provided an adequate vessel in which to place a large bird. It is of note that my attempt at deglazing/gravy making went largely without incident. However, if 'incident-free gravy making' and 'adequate' are your benchmarks for purchases, there are options which suit your needs for less money I feel sure.

Ladies and gentlemen, this pan is not a value at any price. I cannot stress enough the poor quality. If you require more from your cookware than I do, then the adequate performance is not sufficient. If you require less, save money and buy something else.


Calphalon roasting pan [Posted on 2009-01-06]
This was a great roasting pan, with the non-stick rack being perfect for clean up. The only reasons I wouldn't give this 5 stars are:

- When I started roasting my Christmas turkey at high heat (500F), I had not added any liquid to the bottom of the pan to make sure I good initial browning, and the pan seemed a little burnt. It was ok once I added the liquid after reducing the heat.

- Ideally, i'd have preferred a flat rack, not a v shaped one.

And making gravy was so easy with this pan, the best I have used.
